This very American food has gotten very expensive. Since 2020, the cost of beef has nearly doubled. This is happening not just because of a higher demand for the meat, brought on by a protein craze and increased use of GLP-1s, or because of a significantly depleted U.S. herd, the lowest in 75 years, due to drought. It’s also because after being eradicated in the United States in the 1960s, the flesh-eating screwworm is back: A few cases have emerged in Texas. This resurgence could not have come at a worse time for the beef industry—or cows.
